Baingan ka Bharta is an Indian vegetarian dish made of spicy grilled brinjal with onions and some other spices. Brinjal bharta is first roasted, if roasted in charcoal then it tastes more traditional but if you cannot roast it directly on coal then you can grill the brinjal in the oven or on gas. After grilling, mash it and add onion and It is made by mixing mustard oil and tomato. While roasting brinjal, a few cloves of garlic are added inside it, which further enhances its flavor and the garlic also gets roasted along with the brinjal. In India, Brinjal Bharta is also made in many other ways.This is the simplest method, mashing roasted brinjals with raw onions, and grilled garlic peppers.

- 500 gram brinjal
- 300 gram tomato chopped
- 1½ tsp coriander powder
- 1 tsp cumin powder
- ¾ tsp turmeric powder
- 2 tbsp oil
- 1 onion
- 4 cove garlic chopped
- 1 piece garlic
- 2 green chilli chopped
- 1 tsp lemon juice
- 1¼ tsp garam masala
- salt as per taste
Instructions
- Roast the brinjal on gas/ griller stove, remove its peel and mash it.
- Heat oil in a large pan, add onion, green chilli, ginger and garlic and fry for 3 minutes.
- Add ground coriander, cumin, turmeric garam masala and tomatoes and fry till it leaves the grease.
- Add salt to the brinjal and mix well. Cook on low flame till the water dries up.
- Add lemon to it while serving. Avoid adding lemon to hot bharta.
