Tips For Koftas

Making Kofta mixture- keep in mind that the batter should not be thin or thick. The mixture becomes soft only when it becomes thick. While making the mixture, do not add water all at once, add it slowly so that the mixture remains lumpy.

Method- Koftas are not cooked properly and hence become hard. Cook on low flame until golden. Do not put too many koftas in the pan, put only a few to leave enough space. If you continuously cook koftas on high flame, they will remain raw from inside.

Instead of Paneer – If you don’t have Paneer then you can also grate Aloo and add it.

koftas from falling apart- You can use breadcrumb  while making koftas. Using breadcrumbs will give it a crispy coating. Breadcrumbs also help in better binding which can prevent your koftas from breaking into pieces while frying.

Ingredients
  

  • 300 grams paneer grated
  • ½ tsp baking powder
  • 2 tbsp flour
  • 1 pinch Garam masala
  • 1 pinch black pepper
  • salt as required
  • oil for frying

Ingredients for Curry

  • ½ tsp cumin
  • 1 pinch asafetida
  • 4 tomato chopped
  • ¾ tsp red chilli powder
  • ½ cup curd
  • 1 onion chopped
  • 2 tsp fresh cream
  • 1 piece ginger chopped
  • ½ tsp turmeric powder
  • salt as required
  • 4 clove garlic chopped
  • ¾ tsp garam masala
  • 1 bunch green coriander chopped
  • 2 tbsp oil

Instructions
 

  • Add baking powder and all the spices to the paneer, mix it and make koftas and fry them in oil.
  • For gravy, heat oil in a pan and add cumin seeds. Then add asafetida, onion, ginger and garlic and fry for 3-4 minutes.
  • Add tomatoes, red chili powder, turmeric powder, salt and garam masala.
  • Cook until oil leaves. – Add one cup of water to the curd, beat it and mix it in the spices.
  • When it boils, add kofta cream and green coriander and mix.
  • Then enjoy hot creamy kofta
