This recipe is made with only a few ingredients and hence making it is not a complicated task. Yet there are several areas where the recipe may go wrong. So some suggestions –

Quality of gram flour – There are different types of gram flour available and I exclusively use fine gram flour. This should give the barfi a silky smooth texture and more importantly, it should melt in the mouth.
Roasting– Before using gram flour in sweets, it has to be roasted in ghee. Roasting helps in enhancing the taste of gram flour
Sugar Syrup – The consistency of the syrup plays a big role in the recipe of gram flour barfi. Depending on the string level, the consistency of the sugar syrup, the softness varies. Hence a wire is ideal for smooth and soft barfi.

Toppings – Usually, no additional toppings are added to gram flour barfi, but the topping of roughly chopped dry fruits acts as the icing on the cake. Even raisins, coconut and tutti Frutti can be an ideal option.

Ingredients
  

  • 2 cup Gram flour
  • 1 cup sugar
  • 1 cup desi ghee
  • 1 cup milk
  • 2 tsp dry fruit
  • 2 tsp cardamom powder

Instructions
 

  • First of all, take a big bowl and filter the gram flour and add it. Now add milk and 2 tablespoons of desi ghee in the gram flour and mix well. Mash the mixture until the lumps of gram flour disappear completely.
  • After this, add remaining ghee in a pan and heat it on medium flame. When the ghee melts, add gram flour to it and reduce the flame and fry until it turns light pink.
  • When the color of the gram flour changes, turn off the gas and let it cool.
  • Now put half a cup of water and sugar in a vessel and heat it on gas. After some time, when the sugar melts, make the syrup till one string appear.
  • Now put the pan of gram flour again on the gas and slowly pour the prepared syrup into it and mix it with the help of a spoon. When the mixture starts to solidify, turn off the gas.
  • Now take a tray and apply some ghee on its bottom.
  • After this, put the prepared mixture in the tray and spread it all around in equal proportion.
  • After this leave the mixture to settle.
  • After about an hour, spread chopped dry fruits over the mixture and press lightly.
  • Now let the barfi freeze for two more hours, after which cut it into desired shapes. It can be stored for a long time in an airtight container.
