 Ragi dosa   or Finger millet  is a grain widely eaten by people in South India and many African countries. It is rich in calcium and also has high fiber content. It is known as a wonder grain for weight loss. It is considered to be the best helper for people suffering from diabetes. It is also a common baby food in South India. Ragi is very high in carbohydrates and is ranked among the top food grains by most dietitians. Ragi porridge is fed to 28 day old babies and it makes digestion easier. It helps in strengthening the bones of the child by providing high calcium and iron to the body.

Ragi contains a vast range of key nutrients like vitamin C, vitamin E, B-complex vitamins, iron, calcium, antioxidants, protein, fiber, adequate calories and useful unsaturated fats. Eating Ragi based foods like Ragi Upma or Ragi Paratha for breakfast, Ragi Dosa, Ragi Idli activates the digestive juices and ensures complete absorption of the nutrients found in Ragi, which are absorbed into the bloodstream and absorbed into the body.   • Increases mother’s milk production: Lactating women should consume more green ragi as it increases hemoglobin levels which increases the production of breast milk in women. This is also called increased level of lactation. Lactating mother should include green ragi in her daily diet and it will increase the amino acids and breast milk, calcium and iron which is very important for mother and baby.
  • Prevents diabetes: Regular consumption of ragi can help reduce the risk of diabetes. This is because polyphenols and dietary fiber are present in abundance in ragi. Ragi contains a huge amount of fiber compared to other whole wheat grains. This is why most people who consume ragi often do not feel hungry.

Ingredients
  

  • 1 cup ragi flour
  • 1 cup semolina
  • ½ cup rice flour
  • ½ cup curd
  • 1 inc ginger finely chopped
  • 1 green chilli finely chopped
  • 2 tbs coriander finely chopped
  • 1 onion
  • 1 tsp cumin seeds
  • ½ tsp black pepper ground
  • salt as required
  • 3⅓ cup water
  • oil for frying

Instructions
 

  • Firstly, in a large bowl take 1 cup ragi flour, 1 cup rava, ½cup rice flour.
  • Also add ½ cup curd, 1 inch ginger, 1 green chilli, few curryleaves, 2 tbsp coriander, 1 onion, 1 tsp cumin, ½ tsp black pepper and 1 tspsalt.
  • Add 1-2 cups of water and mix well to make a lump-freebooter.
  • Let the batter rest for 15-20 minutes.
  • Add 1½ cups water or as required and prepare a runny consistency batter like Rava Dosa. Otherwise the dosa will not be crisp.
  • Check for consistency of the batter and add more water if necessary.
  • Now carefully pour the dosa batter on the hot tawa.
  • Drizzle ½ or 1 tsp oil on top.
  • Once the dosa turns golden brown, flip and cook.
  • finally, fold the dosa and serve instant ragi dosa with mint chutney or coconut chutney.

Notes

You can also eat Ragi Dosa with coconut chutney or sambar.
