Ingredients
  

  • 1 cup basmati rice long grain rice
  • 1 onion finely chopped
  • 1 piece cinnamon stick
  • 3 cloves
  • 1 green cardamom
  • ½ tsp black peppercorns
  • 1 bay leaf
  • 5 cashew nut
  • 4 raisins
  • 1 tsp ginger-garlic crushed
  • 1 green chilli finely chopped
  • 1 tsp ghee (clarified butter)
  • 2 cups water
  • salt as required

Instructions
 

  • Wash the rice grains in water 2-3 times to remove excess starch. Keep them soaked for 20 minutes. After 20 minutes, filter the soaked rice.
    Heat ghee in a pressure cooker (steel/aluminum cooker of approximately 3-5 liter capacity). Add cinnamon, cloves, cardamom, black pepper and a piece of bay leaf and fry for a few seconds.
    Add chopped onion to it and fry until it turns light brown.
    – Add cashews, raisins, crushed ginger-garlic and chopped green chillies and fry on low flame for a minute.
    – Add rice to the pressure cooker and fry while stirring for a minute.
    Add salt as per taste and 2 cups of water. Mix them well and close the lid. Pressure cook on low flame for 2 whistles.
  • Heat ghee in a pressure cooker (steel/aluminium cooker of approximately 3-5 liter capacity). Add cinnamon, cloves, cardamom, black pepper and a piece of bay leaf and fry for a few seconds.
  • Add chopped onion to it and fry until it turns light brown.
  • – Add cashews, raisins, crushed ginger-garlic and chopped green chillies and fry on low flame for a minute.
  • – Add rice to the pressure cooker and fry while stirring for a minute.
  • Add salt as per taste and 2 cups of water. Mix them well and close the lid. Pressure cook on low flame for 2 whistles.
  • Your ghee rice is ready, leave the cooker closed till the whistle comes out.
    After finding the city you can survey it.

Notes

  • If you do not have a pressure cooker then cook it in a pan. Add equal amount of water and cover with lid while cooking for about 10-12 minutes.
  • You can prepare it in larger quantities by using rice and water in the ratio of 1:2 (ie use 2 cups of water for every 1 cup of rice).
  • Add a few drops of lemon after adding water to separate the cooked rice.
  • You can enjoy it with curd and ghee rice in South Indian style. It is more tasty and delicious when served with pickle, dal and tomato chutney.
